Can Super Bowl Snacks still be healthy?? You Bet!

Fruit & Nut Popcorn

All you need is:

  • 1 cup chopped pecans
  • 1/3 popcorn kernels
  • ¼ cup unsalted butter
  • 1 garlic clove, halved
  • ½ tsp ground coriander
  • ½ tsp cinnamon
  • ½ cup dried cranberries
  • ¼ tsp salt

In a frying pan on medium heat, toast pecans for about 3 min and then set aside.  Pop the corn kernels, which is ~ 8cups when popped.  Melt butter in a small sauce pan over medium heat. Add the garlic and cook for 1-2 minutes until lightly golden.  Remove garlic and drizzle butter over the popcorn.  Next add the pecans, cranberries and salt and toss to combine.  And Voila a light fun snack for everyone to enjoy for Superbowl Sunday or any occasion!

Some alternatives are to add walnuts or any other nut or dried fruit you desire!
