Spicy Eggies!

 

 

All you need:

  •  2 tsps oil (extra virgin olive oil)
  • Handful of spinach 
  • 3-4 mushrooms
  • Red, yellow or orange pepper
  • Onions, white and green
  • Small piece of celery
  • 2 oz cheese, or 1 fat free kraft single
  • 3 egg whites or ¼ cup
  • 1-2 pieces of turkey bacon
  • Hot sauce 

The best way to prepare this breakfast is to chop the vegetables the night before all into small pieces, about 1 cm X 1 cm (it’s a time saver). Heat a medium sized non-stick frying pan over medium heat with the 2 tsps of oil.  Add all of the veggies and turkey bacon which can be cut into small pieces once the pan is hot and sauté for ~ 7 minutes or until soft, and browned.  Pour in the egg whites spread over all of the vegetables and reduce heat to medium-low.  Now if you like hot sauce, sprinkle on as much as you like for taste and for spicier eggs.  Cook until the edges are easy to lift with a spatula or ~7-10 minutes.  Now flip!  If you have a hard time flipping the omelette cut it in half with the spatula and flip each side individually.  Add grated cheese, or cheese slice and voila, a delicious, hearty, breakfast! 

P.S. This is great even without hot sauce, and can be served with ketchup!
